This flapjack is always a big favorite during our BioEnergy courses. It's really simple and versatile. If you do try this please let me know how you get on.
Rolled oats flapjack Ingredients
100g butter
40g cacao butter (if you don't have it butter is just fine)
70g brown sugar
2 tbsb honey
175g rolled oats
75g chopped nuts and seeds (whatever your house offers or you like)
140g dried fruit (cherries, apricots, raisins, prunes whatever you have or fancy)
Method
STEP 1: Put butter, soft brown sugar and honey in a small pan, then heat gently until melted.
STEP 2: Tip oats, nuts, seeds and fruit of choice into a medium sized bowl. Pour over the melted butter mixture and stir to combine.
STEP 3: Transfer to a 20cm x 20cm greased and lined baking tray and cook at 160C/140C fan/gas 4 for 35-40 mins. Remove and cool in tin, then slice into 16. Will keep in an airtight container for up to 3 days.
