ROLLED OATS FLAPJACK

This flapjack is always a big favorite during our BioEnergy courses. It's really simple and versatile. If you do try this please let me know how you get on.


Rolled oats flapjack Ingredients

  • 100g butter

  • 40g cacao butter (if you don't have it butter is just fine)

  • 70g brown sugar

  • 2 tbsb honey

  • 175g rolled oats

  • 75g chopped nuts and seeds (whatever your house offers or you like)

  • 140g dried fruit (cherries, apricots, raisins, prunes whatever you have or fancy)


Method

  • STEP 1: Put butter, soft brown sugar and honey in a small pan, then heat gently until melted.

  • STEP 2: Tip oats, nuts, seeds and fruit of choice into a medium sized bowl. Pour over the melted butter mixture and stir to combine.

  • STEP 3: Transfer to a 20cm x 20cm greased and lined baking tray and cook at 160C/140C fan/gas 4 for 35-40 mins. Remove and cool in tin, then slice into 16. Will keep in an airtight container for up to 3 days.
